Hopkins Bay Resort is set in a remote, unspoiled fishing village overlooking Belize’s spectacular Caribbean coast
The town is laid-back and beachy, with a smattering of cash-only type restaurants. A bumpy track leads you to Hopkins Resort – with its equally relaxed atmosphere, but far-from-rustic provisions.
Villas are lofty triplexes, with private balconies and sea views. Satellite flat-screens, DVD players, iPod docks and air con come as standard. Fresh coconut fish stews are on the menu at the Beach Side Restaurant and Pina Coladas at the Rhum Shack, both on site along with two swimming pools.
Despite being blissfully miles from anywhere, you can get free pick-ups from the 5* PADI dive center. Warm, clear seas make for wonderful year-round diving and the Belize Barrier Reef is part of the second largest in the world. Non-divers are kept busy with cooking classes, yoga and jungle trekking.
